Japanese Home Cooking With A Professional Chef

We don’t know about you, but when someone says ‘Japanese cuisine’ we picture a white-aproned chef, hachimaki headband fixed in place, deftly slicing a giant tuna and then presenting us with a sliver of pink fish on a tiny plate. Perfection. Not exactly whip-it-up-yourself-on-a-Friday-night food though, is it?

Or is it? Japanese cuisine is as varied as it is uniformly delicious – and the meals served in the homes of everyday Tokyoites can be deceptively simple. Get the basics right, throw in some stylish chopsticks and bowls and you can create a healthy Japanese feast with just a few simple ingredients. For home chefs trying to up their game in the kitchen, this class will show you how to do exactly that.

We’ll set you up with a super-relaxed, Cordon-Bleu trained, Michelin-experienced Japanese chef in her stylish private cooking space so you can learn home cooking techniques from a true expert. She’ll teach you how to make dashi broth (one of the cornerstones of Japanese cooking), how to slice simple sashimi, make a bowl of miso soup, and prepare a refreshing namasu vegetable salad, among others. By lunchtime, you’ll be ready to chow down on your creations and toast your master with a well-deserved glass of sake. It’s only a matter of time before you’re on Chef’s Table, we just know it…

Learn about the Expert

Your Tokyo born, Cordon Bleu-trained chef is a veteran of France's Michelin scene, having worked in numerous restaurants from Le Meurice to Arpege, and even under world-famous butcher Hugo Desnoyer. After returning to Japan, she decided to go back to her roots, and study the cuisine of her own country. After being admitted to the prestigious Tsuji Cooking Laboratory, she completed a course with a focus on home-style Japanese cuisine and co-authored a stunningly photographed cookbook featuring her own recipes with a friend. In 2018 she decided to turn an entire floor of her apartment into a private cooking school, in a bid to make Japanese cooking accessible to everyone.
